The area is pretty good for road cycling, there are some spectacular views along the way and many great climbs As always it's best to avoid the main roads (for example road number 47 is pretty busy and narrow so I'd avoid it. Luckily there are many side roads with little traffic and plenty of good quality bike paths that take you away from traffic. Seeing that Zakopane is a tourist location there will be more traffic during the summer and weekends but the best roads and views are scattered around Zakopane where most tourists don't go, so usually you'll be fine

If you are able to cross the border and drop in to Slovakia then this road is super nice. You can go back the same way or take road number 66 back to PL. I don't know how things stand with crossing the border and covid so you might need to find that out first.

Butorowy Wierch - tough climb but again offers really beautiful scenery:

If you are a fan of pro cycling you probably want to ride up the Gliczarów climb which was heavily featured in many editions of the Tour de Pologne. Not the most scenic of climbs, but a famous one for sure.

There is an amateur road race called Tatra Road Race and the whole course is pretty epic. Lots of side roads, steep climbs and great scenery, you can poke around it:
